One goal I have as an ultrarunner is finding ways to fuel my body in the most natural way while training and competing. I have had success using Clif Shot Bloks, and Honey Stinger, but after 40 miles of running my body craves “real food”. I decided to create energy bites that will help fuel my body while I train.

These bites take about 20 minutes to prepare and can be eaten right away, placed in the refrigerator to eat later or even placed in the freezer so you can take them out with you for a workout. They are delicious and will give you the needed energy and focus to complete your workout. They can also be eaten as an everyday snack.

Each bite contains 48 calories.

What you will need:

3 cups organicgirl SuperGreens (the main ingredient)
¼ cup finely shredded coconut
½  teaspoon cinnamon
¼ cup soaked quinoa
½ cup roasted and salted sunflower seeds
½ cup dated (pitted)
¼ cup lemon zest

Using a food processor mix all ingredients until finely chopped. Take 1 tablespoon of the chopped ingredients and roll it into a ball in the palm of your hand. Set in the refrigerator for one hour. Sprinkle with sugar to taste. Makes 9 – 12 energy bites.

    • 1 g of polyunsaturated fat
    • 0 g of cholesterol
    • 54 mg of sodium
    • 69 mg of potassium
    • 6 g carbohydrates
    • 1 gram of protein
    • 3% iron
    • 1% calcium
    • 10% Vitamin A
    • 6% Vitamin C
    • 39% Vitamin K
    • 2% folate
    • 1% magnesium
    • 2 % magnanese
